Surprisingly flavorful healthy meal!! These recipes are hard to come by, and even harder to present to my spoiled family! Spoiled in the best way of course. The chicken and veggies release quite a bit of moisture, so I will be looking into a solution for this.


  • 6 chicken breasts
  • 8 oz. mushrooms, sliced
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 3 Roma tomatoes
  • 3 Tbsp. olive oil, divided
  • 3 tsp. minced garlic cloves
  • 2 tsp. dried oregano
  • 2 tsp. Nature’s Seasoning
  • 1 c. shredded mozzarella cheese


  1. Preheat oven to 375*. Place chicken breasts in a 9×13″ baking dish and brush each surface liberally with olive oil.
  2. In a large bowl add in veggies, garlic, Nature’s seasoning, and 2 Tbsp. of olive oil. Toss until evenly coated and place on top of chicken breasts
  3. Cover with foil and bake for 1.5 hours. Remove foil and sprinkle cheese on top. bake for an additional 10 minutes until cheese is just barely melted.

Yields 6-8 servings.
