I was told by my dear mother to eat the remaining strawberries in the fridge tonight before they went south. It wasn’t until after I had decided to make crisp that I realized her intention was to encourage a healthy dessert. Yet here I am, typing the recipe for the dessert I just made to share with you fine folks. Sorry momma, I’ll be healthy another night.
Ingredients:
- 16 oz. package fresh strawberries, sliced
- 4 oz. package fresh blueberries
- 1/4 c. sugar
- 3 Tbsp. corn starch
- 1 c. flour
- 3/4 c. old fashioned oats
- 2/3 c. brown sugar
- 1/4 c. sugar
- 1 tsp. salt
- 1/2 c. butter, melted
- optional: vanilla ice cream
Directions:
- Preheat oven to 350*.
- In a greased 2 quart casserole dish, mix the strawberries, blueberries, 1/4 c. sugar, and cornstarch together until well combined.
- Place butter in a medium-sized bowl and microwave for 4 minutes on power 2 setting until melted. Add flour, oats, brown sugar, salt, and granulated sugar. Use a fork to stir until all ingredients are moist. Sprinkle streusel evenly over the fruit.
- Bake for approximately 50-55 minutes until topping is browned and fruit later is bubbly.
- Serve warm with optional vanilla ice cream on top! I take that back, it isn’t optional.
Yields approximately 6 servings.
