Ingredients:

  • 2 cups chicken broth
  • 1 (8 oz.) bottle hoisin sauce
  • 1/3 cup white vinegar
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup granulated sugar
  • 1/4 cup cornstarch
  • 5 garlic cloves minced
  • 3 tablespoons fresh ginger minced
  • 1 teaspoon red pepper flakes
  • pounds boneless pork roast
  • 8 oz. bag broccoli slow
  • whole romaine leaves
  • sliced green onions
  • tortillas
  • optional: shredded cheese

Directions:

  1. Whisk together broth, hoisin sauce, vinegar, soy sauce, sugar, corn starch, garlic, ginger, and red pepper in slow cooker until well combined.
  2. Add pork to slow cooker and spoon some of sauce over top. Cook on low 6-8 hours. Remove pork from slow cooker and shred with 2 forks. Return to the slow cooker and allow to soak up the juices a bit longer.
  3. To serve, warm the tortilla in the microwave for about 15 seconds until soft, lay a romaine leaf down, fill with drained shredded pork, spoon on broccoli slaw, and top with green onions and optional shredded cheese.

Yields 8 servings.
