Pumpkin Pie Cookies

Ingredients:

  • 1/2 c. softened butter
  • 1/2 c. vegetable oil
  • 1/2 c. pumpkin puree
  • 1 c. granulated sugar
  • 1/2 c. powdered sugar
  • 1/2 tsp. vanilla
  • 2 large eggs
  • 4 c. flour
  • 1/4 tsp. baking soda
  • 1/4 tsp. cream of tarter
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • pinch of cloves

Glaze:

  • 3 c. powdered sugar
  • 4 Tbsp. water
  • 1/4 tsp. pumpkin pie spice

Directions:

  1. Preheat oven to 350*. Butter cookie sheets lightly and set to the side.
  2. In a large bowl, stir together butter, oil, pumpkin, sugars, vanilla, and eggs until incorporated until smooth. Slowly mix in all the dry ingredients until completely incorporated.
  3. Measure about 2 Tbsp. worth of dough and form into a flattened ball. I used the small Pumpkin Pie Spice plastic “jar” to press the center down to form a large indention where the glaze will rest. About 8 cookies can fit onto one pan.
  4. Bake for 7-8 minutes.
  5. While cookie bake, whisk together all the glaze ingredients until smooth.
  6. Once cookies are finished baking, cool on baking rack. Spoon about 1.5 tsp. glaze into the indention of each cookie. Glaze will set within 2 hours.

Yields 3-4 dozen cookies.
