Ingredients:
- 1/2 c. softened butter
- 1/2 c. vegetable oil
- 1/2 c. pumpkin puree
- 1 c. granulated sugar
- 1/2 c. powdered sugar
- 1/2 tsp. vanilla
- 2 large eggs
- 4 c. flour
- 1/4 tsp. baking soda
- 1/4 tsp. cream of tarter
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- pinch of cloves
Glaze:
- 3 c. powdered sugar
- 4 Tbsp. water
- 1/4 tsp. pumpkin pie spice
Directions:
- Preheat oven to 350*. Butter cookie sheets lightly and set to the side.
- In a large bowl, stir together butter, oil, pumpkin, sugars, vanilla, and eggs until incorporated until smooth. Slowly mix in all the dry ingredients until completely incorporated.
- Measure about 2 Tbsp. worth of dough and form into a flattened ball. I used the small Pumpkin Pie Spice plastic “jar” to press the center down to form a large indention where the glaze will rest. About 8 cookies can fit onto one pan.
- Bake for 7-8 minutes.
- While cookie bake, whisk together all the glaze ingredients until smooth.
- Once cookies are finished baking, cool on baking rack. Spoon about 1.5 tsp. glaze into the indention of each cookie. Glaze will set within 2 hours.
Yields 3-4 dozen cookies.
