Poppa found one measly brown soft spot on an apple today, so of course that calls for apple crisp. Wouldn’t want to waste some perfectly good honeycrisp apples now would we?
INGREDIENTS:
- vanilla bean ice cream
Apple Crisp
- 8 small honeycrisp apples or 6 large
- 1.5 c. light brown sugar
- 1 c. all-purpose flour
- 1 c. old fashioned oats
- 2 tsp. cinnamon
- 1.5 tsp. nutmeg
- 3/4 c. (1.5 sticks) butter, softened
Fireball Caramel Sauce
- 1 c. sugar
- 1/4 c. water
- 1/2 c. heavy whipped cream, room temp
- 1/2 c. butter (1 stick)
- 1/3 c. Fireball cinnamon whiskey
- 1/8 tsp. salt
- 1/4 tsp. nutmeg
- 1 egg
- 1/2 c. sugar
DIRECTIONS:
Apple Crisp
- Preheat oven to 375*.
- Peel and core apples and slice into thin uniform pieces. Throw the pieces into a greased 9×13″ glass baking dish.
- In a large bowl, combine the softened butter, brown sugar, flour, oats, cinnamon, and nutmeg. Use a fork to combine the ingredients (I used my hands to complete the process) until all butter is mixed in and a crumbly mixture forms. Sprinkle this streusel over the top of the apples.
- Bake for approximately 45-50 minutes until streusel is crispy.
Fireball Caramel Sauce
- In a medium sauce pan over medium heat, whisk together the water and 1 cup of sugar; stirring constantly for 3 minutes until the sugar is no longer granular-looking.
- Reduce heat slightly and do not stir for approximately 8 minutes until the mixture looks amber in color. Remove from the heat and allow to cool for approximately 2 minutes.
- Stir in heavy whipping cream, butter, Fireball, salt, and nutmeg. Whisk until smooth.
- In a separate small bowl, whisk together the egg and 1/2 cup sugar. slowly add this to the pan while whisking so the eggs do not scramble.
- Return the pan to medium heat and cook until the sauce thickens.
- Assembly: Spoon a helping of warm apple crisp onto a plate, top with a generous scoop of ice cream, and finally pour the Fireball sauce over the ice cream so that it flows onto the apple crisp.
Yields approximately 12 servings.
