The beautiful part of a slow cooker meal is leaving and coming back to an house full of beautiful aromas. This recipe will have you salivating upon opening the door!!
Ingredients:
- 8 chicken thighs
- 2 Tbsp. olive oil
- 28 oz. Hunt’s Basil Crushed Tomatoes
- 1 green bell pepper, chopped
- 4 tsp. minced garlic
- 1/2 tsp. oregano
- 1/2 tsp. rosemary
- 1/2 tsp. thyme
- 1 c. red cooking wine
- 2 Tbsp. sugar
- 2 Tbsp. sugar
- 1/2 tsp. salt
- 1/2 tsp. pepper
- cooking spray
- optional: steam brown rice
Directions:
- Spray Slow Cooker with nonstick cooking spray. Combine all the ingredients except the chicken thighs and olive oil into the Slow Cooker.
- Pour half of the oil in a large skillet over medium high heat. Cook 4 chicken thighs until just browned on the outside. Add to the slow cooker. Pour in the remaining olive oil, and wait until heated. Cook the last 4 chicken thigh and add to the slow cooker. Stir all the ingredients together making sure the chicken thighs are submerged.
- Cook on low for 6 hours or high for 3 hours. Serve over steamed brown rice.
Yields approximately 6 servings.
