Slow Cooker Chicken Cacciatore

 

The beautiful part of a slow cooker meal is leaving and coming back to an house full of beautiful aromas. This recipe will have you salivating upon opening the door!!

Ingredients:

  • 8 chicken thighs
  • 2 Tbsp. olive oil
  • 28 oz. Hunt’s Basil Crushed Tomatoes
  • 1 green bell pepper, chopped
  • 4 tsp. minced garlic
  • 1/2 tsp. oregano
  • 1/2 tsp. rosemary
  • 1/2 tsp. thyme
  • 1 c. red cooking wine
  • 2 Tbsp. sugar
  • 2 Tbsp. sugar
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • cooking spray
  • optional: steam brown rice

Directions:

  1. Spray Slow Cooker with nonstick cooking spray. Combine all the ingredients except the chicken thighs and olive oil into the Slow Cooker.
  2. Pour half of the oil in a large skillet over medium high heat. Cook 4 chicken thighs until just browned on the outside. Add to the slow cooker. Pour in the remaining olive oil, and wait until heated. Cook the last 4 chicken thigh and add to the slow cooker. Stir all the ingredients together making sure the chicken thighs are submerged.
  3. Cook on low for 6 hours or high for 3 hours. Serve over steamed brown rice.

Yields approximately 6 servings.
