Bruschetta Bread is my absolute favorite entertaining appetizer! It is incredibly easy to make yet gives a sophisticated presentation and INCREDIBLE flavor. This test recipe I experimented with tonight replaced the bread with chicken to make the usual appetizer into a main course! Next time I will experiment with spreading the chive cream cheese onto the chicken before adding the tomato mixture!
Ingredients:
5 chicken breasts
olive oil
1 Tbsp. + 1 tsp. Nature’s Seasoning
4-6 Roma tomatoes, diced
1/4 c. Basil Pesto
1 tsp. garlic salt
1 c. shredded parmesan cheese
1 c. shredded mozzarella cheese
Directions:
Preheat oven to 400*.
In a 9×13″ glass baking dish, arrange the chicken breasts in a single layer. Drizzle each with approximately 1 Tbsp. of olive oil and use your hands to evenly coat all surfaces of the chicken. Sprinkle both sides lightly with Nature’s Seasoning. Cover with foil and bake for about 20 minutes.
While chicken is baking, combine the tomatoes, Pesto, 2 Tbsp. of olive oil, 1 tsp. of Nature’s seasoning, and garlic salt in a small bowl. Set to the side.
Remove the chicken breasts from the oven and flip. Top each breast with the pesto tomatoes and then the shredded cheese. Return to the oven, covered again for about 20 minutes or until the chicken is cooked through.
Remove the foil and broil for an additional couple minutes until the cheese is browned and bubbly.
Yields approximately 6 servings.
